Bran Muffins

Ingredients

4 cups Skinners Raisin Bran not crushed

2 1/2 cups flour

1 cup sugar

1/2 cup chopped nuts

1/2 cup raisins or craisins

2 1/2 teaspoons baking soda

1 teaspoon salt

2 cups buttermilk (see note below)

1/2 cup oil

2 beaten eggs

OPTIONAL:

grated orange peel

chopped apples

grated carrots

Directions

Thoroughly mix dry & wet ingredients. Cover & store in refrigerator for at least 1 hour, or up to 3 weeks.
Fill greased/sprayed muffin pans or paper muffin liners almost full.
Bake at 375 degrees for 25-30 minutes.

Notes

Buttermilk substitute: Add 2 Tbsp cider vinegar or white vinegar to 2 cups lowfat milk. Let stand a few minutes to sour the milk.
